Simple Vanilla Cupcakes

Baking doesn’t have to be complicated and these simple vanilla cupcakes always prove popular here at LittlePod HQ! Using high quality REAL ingredients makes such a difference and with our vanilla extract in the cake mix and vanilla paste in the icing, these are a delicious treat that are bursting with flavour!

Serves : 8 people.

Pre-heat oven to 160°C (fan-assisted) / 180°C (conventional) / 350°F.

The word vanilla comes from the Spanish vainilla which means ‘little sheath’.

Method

  1. Pre-heat the oven and prepare a baking tray using paper cupcake cases of your choice.
  2. Cream the sugar and softened butter together in a bowl.
  3. Sift the flour into the mix, then add the eggs and vanilla extract and stir until combined.
  4. Divide the mix evenly into the paper cases and bake for around 20 mins, or until an inserted skewer comes out clean. Remove from the oven and place on a wire rack to cool.
  5. Prepare the icing by mixing the butter, icing sugar and vanilla paste together.
  6. When the cakes have cooled completely, use a piping bag or simply a knife to top the cakes with the butter icing. You can add extra decorations if you wish.
