Felipe’s Fruit Flapjacks

Created by chef Felipe Coelho, this delicious fruit flapjack was the perfect accompaniment to morning coffee when we celebrated International Real Vanilla Day at Chelsea Physic Garden in 2022. Keen to recreate the recipe, Janet has added a little tweak of her own – a squeeze of LittlePod’s natural vanilla paste and a sprinkling of glacé cherries!

 

Makes 16 fabulously fruity flapjacks!

This recipe includes

Natural Vanilla Paste

Ingredients

  • 1kg oats
    500g golden syrup
    500g demerara sugar
    500g butter or margarine
    500g blueberries or mixed citrus peels
    Small handful glacé cherries
    Squeeze of LittlePod vanilla paste

Method

  1. Melt the golden syrup and butter together in a pan.
  2. Place the demerara sugar, oats and vanilla paste in a bowl, then add the melted golden syrup and butter and mix well.
  3. Put half of the mixture into a baking tray and press.
  4. Add the fruit to the baking tray mixture and spread evenly.
  5. Use the remaining mixture and spread across the top, making a sandwich, with the fruit in the centre.
  6. Bake in a fan-assisted oven at 170C for 20-25 minutes, or until the flapjack mixture is golden brown on the top.
