Double Vanilla Biscuits

This recipe comes from Harriet, LittlePod’s designer, who doubles up on vanilla to make her biscuits twice as delicious! The ideal accompaniment to a nice cup of Earl Grey, and perfect when you need five minutes to sit and think.

Pre-heat oven to 180°C (fan-assisted) / 200°C (conventional) / 350°F.

Ingredients

  • 115g caster sugar
    65g polyunsaturated margarine
    1 small egg, lightly beaten
    1 tbsp golden syrup
    1 tbsp lemon juice
    1½ tsp LittlePod natural vanilla paste
    175g plain flour
    ½ tsp bicarbonate of soda
    ½ tsp baking powder
    1 tsp mixed spice
    50g icing sugar
    1 tsp LittlePod vanilla extract
    1 tsp hot water

Method

  1. Mix the sugar and margarine together in a large bowl with an electric whisk until it is smooth. Then add the egg, golden syrup, lemon juice and vanilla paste and whisk some more.
  2. In another bowl, sift the flour, bicarbonate of soda, baking powder and mixed spice, and mix together. Then add the dry mixture to the first bowl a little at a time, beating thoroughly. You’re aiming for a stiff dough, so if your mixing isn’t making a difference, sift some more flour in a little at a time.
  3. Divide the mix into two balls, wrap each in cling film and leave in the fridge for 30 minutes. Preheat the oven.
  4. Lightly spray two baking trays with cooking spray. Lightly flour your worktop and knead the two balls of dough together again. Roll it evenly so it’s about 0.5cm thick all over. Use your cutter and transfer them over to the trays, leaving a gap of at least 2cm between each shape. Re-roll and repeat to use as much of the dough as possible.
  5. Put in the oven for about eight minutes, checking and turning after five minutes. You want the biscuits to be an even golden brown. Transfer to a cooling rack.
  6. When the biscuits have cooled completely, mix the water, vanilla extract and icing sugar together to make a delicious icing. Use an icing bag to decorate your biscuits. Let the icing dry. Keep the biscuits in an airtight container for up to four days.
