Devon Vanilla Scones

There is nothing more Devon than a cream tea, but the layering of the cream and jam can be a contentious issue. Opinions remain divided as to whether the jam or the cream should be added first. Regardless of your personal preference, do be sure to add a generous squeeze of real vanilla to the mix!

Serves : 8 people.

Pre-heat oven to 200°C (fan-assisted) / 220°C (conventional) / 425°F.

Ingredients

  • 350g self-raising flour
    ¼ tsp salt
    1 tsp baking powder
    85g butter
    3 tbsp caster sugar
    100ml milk
    75ml buttermilk
    1 tsp LittlePod natural vanilla paste
    1 medium egg

Method

  1. Pre-heat the oven. Pour the flour and salt into a bowl, add the butter and mix to make fine crumbs. Then add the sugar and mix.
  2. Warm the milk slightly, then stir in the buttermilk and vanilla paste.
  3. Make a well in the flour mix and add the liquid. Combine using a fork to bind the flour into a dough.
  4. Pat the mixture down to a depth of 4 cm. Take a 5 cm cutter, dip it in flour to stop the mixture sticking, and cut out your scones.
  5. Brush the tops with a little egg, milk and a small squeeze of vanilla paste.
  6. Place on a baking tray lined with parchment paper. Bake for 10 minutes or until your scones are golden and have risen.
